SAPODILLA
JUICE
This is a delicious fruit that may
be eaten fresh when cut open like a flower, as in the photograph.
The pulp can be used to make a refreshing
and filling juice or sherbet.
Cut open the fruit, peel and section it. Place the pulp in
a strainer and slowly add water or milk, stirring and mashing
with a wooden spoon until the pits are quite free of fruit
pulp. Blend the juice, sweeten to taste and serve with crushed
ice in round cups.
