3 pitayas, peeled and sliced
Lettuce
2 chicken breasts, stewed and diced
1/4 cup homemade avocado mayonnaise
Mix the chicken with the mayonnaise, and place this on a
bed of lettuce leaves on each plate. Garnish with slices
of pitaya.

8 small puff pastries
Feijoa sauce
1 peeled and sliced pitaya
Slice the pastries horizontally and place a piece of pitaya
between the halves. Pour the sauce onto a dish and then
place the pastries on it.

The pitaya is as exotic as it is exquisite.
Its delicate taste invites us to eat it without further
ado. It looks inviting and refreshing on a bed of crushed
ice, either in slices or simply cut in half and eaten with
a small spoon.
