GUAVA JELLY

9 lbs. fresh, ripe guavas
1 1/2 lbs. sugar

Wash the guavas and break them up by hand, covering them with water in a bowl. Leave the fruit overnight hung in clean cheesecloth so all the liquid can drain off.

On the following day, mix the liquid with the sugar and make a jelly over high heat. When this begins to jell, pour it into a moistened pan and leave it until it sets. Remove from pan and serve.
