1 lb. cherimoya pulp
1 1/2 lbs. sugar
3 tablespoons lime juice
W afers ( round and thin, about 8 inches in diameter )
Raisins
Orange and lime peels, blanched
Almonds
Cohune nuts
Place the fruit pulp, mixed with the sugar and the lime
juice, in a heavy pot and cook over medium heat, stirring
constantly to avoid sticking until obtaining the consistency
of heavy syrup. Allow to cool. Chop the raisins, the peels
and the almonds finely and mix them with the fruit. To construct
the nougat, spread a layer of wafers and then one of the
fruit and nut mixture, pressing gently as you go along and
leaving a layer of wafers on top. Cool for 4 hours in the
refrigerator and then cut into chunks.
