CHERIMOYA WITH YOGHURT AND MUSLEI

1 cherimoya
Yogurt
Muesli

Slice the cherimoya in half and spoon out the pulp from the fruit's center. Remove the pits, cut the pulp into small pieces and put it back into the shell. Now cover the fruit with yogurt and muesli. The cherimoya can be refrigerated one hour before serving.


CHERIMOYA NOUGAT

1 lb. cherimoya pulp
1 1/2 lbs. sugar
3 tablespoons lime juice
W afers ( round and thin, about 8 inches in diameter )
Raisins
Orange and lime peels, blanched
Almonds
Cohune nuts

Place the fruit pulp, mixed with the sugar and the lime juice, in a heavy pot and cook over medium heat, stirring constantly to avoid sticking until obtaining the consistency of heavy syrup. Allow to cool. Chop the raisins, the peels and the almonds finely and mix them with the fruit. To construct the nougat, spread a layer of wafers and then one of the fruit and nut mixture, pressing gently as you go along and leaving a layer of wafers on top. Cool for 4 hours in the refrigerator and then cut into chunks.
